Aubergine Dip

Method :

Roast the aubergine on an open flame until the skin is black­ened well.

Remove from the flame and scrape off the skin, then rinse under water.

Now mash the aubergine to a thick paste and mix well with the remaining ingredients.


Aubergine : 250 gms
Fresh yogurt : 2 cups
Lemon juice : 4 tbsp
Salt : 1 tsp
Green chilies : 6, chopped
Fresh coriander : 4 tbsp, chopped
